Ingredients
- 4 ripe but firm peaches
- 2 tablespoons melted butter
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- Vanilla ice cream
- 1/3 cup chopped toasted pecans
- Honey or caramel sauce for drizzling
- Fresh mint for garnish, optional
Instructions
- Preheat the grill: Heat your outdoor grill to medium, approximately 350–375°F. Clean and lightly oil the grill grates.
- Prepare the peaches: Cut each peach in half and remove the pit.
- Make the cinnamon butter: Combine the melted butter, brown sugar, cinnamon and vanilla extract in a small bowl.
- Season the peaches: Brush the cut side of each peach with the cinnamon-butter mixture.
- Grill: Place the peaches cut-side down on the grill. Cook for 3–4 minutes, or until grill marks appear. Turn and cook for another 2–3 minutes, until warm and slightly softened.
- Add the toppings: Place the warm peaches on a serving platter. Top each half with a scoop of vanilla ice cream, toasted pecans and a drizzle of honey or caramel.
- Serve immediately: Add a little fresh mint, if desired, and enjoy while the peaches are warm and the ice cream is beginning to melt.
